Quesos Carlos Navas will once again attend Madrid Fusión, the congress set to celebrate its 20th anniversary in 2022 under the slogan “Beyond the Product.”

Over the course of three days, ancestral, traditional and future cooking techniques will be revisited — from open-fire roasting to microwave cooking and the use of ultrasound, the foundation for great dishes of the future. Topics such as the return to the craft of cooking, the transformation of ingredients and meticulous preparation will also be addressed.

The congress will feature the presence of renowned international chefs in line with emerging trends, including René Redzepi, Gastón Acurio, Alex Atala, Dabiz Muñoz, Joan Roca, Rasmus Munk and Antonia Klugmann, among others.
