<p>
  The passion for artisan cheese from our region arrived this Wednesday at
  <a href="https://www.madridfusion.net/" target="_blank" rel="noopener">Madrid Fusión</a>,
  Spain’s most influential international gastronomy congress. There,
  <strong>Quesos Carlos Navas</strong> had the honor of offering a tasting session featuring
  some of our specialties within the program organized by
  <a href="https://www.salamancaenbandeja.es/" target="_blank" rel="noopener">Salamanca en bandeja</a>,
  the gastronomic club promoted by the Provincial Council of Salamanca.
</p>

<p>
  Our master cheesemaker, Carlos Navas, shared the stage with the Provincial Deputy for Tourism,
  <strong>Juan Carlos Zaballos</strong>, who stated in an interview with
  <a href="https://www.cope.es/emisoras/castilla-y-leon/salamanca/cope-penaranda" target="_blank" rel="noopener">COPE Peñaranda</a>
  that “the Provincial Council of Salamanca brings our finest gastronomy to Madrid Fusión to promote it and make it known.”
</p>

<h3 style="font-size:1.4em;">An international showcase for Spanish cuisine</h3>
<p>
  Madrid Fusión brings together each year in the capital some of the most prestigious chefs from Spain and around the world.
  This edition focused on the reasons that made Spanish cuisine shine three decades ago,
  highlighting the role of innovation and tradition in contemporary gastronomy.

<h3 style="font-size:1.4em;">Salamanca, a highlight at the congress</h3>

  The Provincial Council of Salamanca was present with tastings and product demonstrations in which companies from the region participated.

<p><strong>Quesos Carlos Navas</strong> will once again attend <a href="https://www.madridfusion.net/" target="_blank" rel="noopener">Madrid Fusión</a>, the congress set to celebrate its 20th anniversary in 2022 under the slogan “Beyond the Product.”</p>

<p>Over the course of three days, ancestral, traditional and future cooking techniques will be revisited — from open-fire roasting to microwave cooking and the use of ultrasound, the foundation for great dishes of the future. Topics such as the return to the craft of cooking, the transformation of ingredients and meticulous preparation will also be addressed.</p>

<p>The congress will feature the presence of renowned international chefs in line with emerging trends, including René Redzepi, Gastón Acurio, Alex Atala, Dabiz Muñoz, Joan Roca, Rasmus Munk and Antonia Klugmann, among others.</p>
